- 29.58 ml cornstarch
- 118.29 ml brown sugar
- 566.99 g can chunk pineapple, undrained
- 14.79 ml gluten-free soy sauce
- 59.14 ml vinegar
- 453.59 g gluten-free little smokies (Gluten Free, I Like Wimmer's)
directions
- In a 1.5 to 2 quart casserole: combine the cornstarch and brown sugar.
- Stir in remaining ingredients.
- Microwave, covered, 13-15 mins or until mixture boils and thickens, stirring halfway.
- It does have a tendency to boil over in the microwave so you might want to keep an eye on it unless you need to clean your microwave.

This recipe is a winner, according to my sweet n' sour lovin' DH. Just the right amount of tang and sweetness. Since I needed to serve a large crew, I doubled every ingredient except the pineapple--I added 3/4 c. orange juice to provide the liquid that would have been in another can of pineapple. We cut up the smokies into thirds and served it over rice. YUMMY! This is a very fast and easy dish to prepare. In about 30 minutes it was on the table. I made mine on the stove top instead of the microwave. My doubled recipe cost about $6 and easily provided 2 meals. I think next time I will add a bit of ground ginger to give it a little zip. If you like sweet n' sour, you will like this recipe. This will become a regularly served dish in our household.Thanks lisann!
