To make my heart and my hips a happier I made some changes. I used 1 cup of egg beaters 1 bag of fresh spinach 1 3/4 cup fat free milk 3/4 cup fat free plain yogurt 1/2 cup fat free cheddar cheese I fried some diced onion in canola oil until brown, chopped up the spinach and fried it with the onion until wilted. Mixed everything together and topped with italian bread crumbs (no butter) baked 50 minutes and viola! YUMMY and healthy!

I rarely dine at buffets, especially those that are bound to attract children, but I do have a Hometown Buffet in my neighborhood. I've long loved this dish but didn't know what it was called. I also didn't have much luck getting the name of it, let alone a scoop of it, on my visits to my local HB. They rarely make it and when they do - it's gone in a flash! I just happened to be looking up nutritional information for something else and realized that was the perfect way to get the name of this recipe - by scrolling their nutritional pages, then immediately found it on the 'Zaar here and made it for breakfast! Awesome! Just like the stuff in the restaurant! By the way, if you are a fan of Hometown Buffet, you can get buy one get one free coupon if you sign up for their eClub on the website. They haven't spammed me yet and the coupon is printable, good for two weeks and is in your inbox the next morning. So on your way to buy the cream to make this, you can stop at HB with a friend and fill up on fruit and roast beef!

I tripled the recipe for a party of 21 and added 3 large cloves of chopped garlic for extra bite. Next time I would go easy on the paprika and cook it the full 50 minutes (I took it out at 35 min). It was a HUGE success!!!! Women were asking me for the recipe!!!!!

I'm not a huge cooked spinach fan, but this was absolutely delicious. My top was VERY brown and dry (unlike another review). I forgot it was in the oven, but i'm sure I must have come close to the 50 min., if I didn't go over that. Thanks for a wonderful way to eat healthier.

There seems to be way too much spinach. Next time I will either half the spinach or double the other ingredients. Also, topping was soggy. I would suggest baking for 20 min. without breadcrumbs and butter, then adding them for the remaining cooking time.

I just cooked the recipe a little longer, like 1/2 longer that specified, and it was delicious, fluffy and done. Just make sure you don't count on the time suggested and you'll be fine.
