Pumpkin Spice Cake with Maple Icing

Cake
- 177.44 ml butter, softened
- 473.18 ml sugar
- 425.24 g can pumpkin
- 4 eggs
- 4.92 ml vanilla
- 709.77 ml flour
- 12.32 ml ground cinnamon
- 9.85 ml baking soda
- 7.39 ml ground cloves
- 2.46 ml salt
- 236.59 ml chopped walnuts (I use pecans)
- 236.59 ml raisins

Frosting
- 118.29 ml butter
- 236.59 ml sugar
- 141.74 g can evaporated milk
- 59.14 ml maple syrup (the real stuff,not just maple falovored)
- 1.23 ml vanilla
directions
- Cream butter and sugar until fluffy.
- Add pumpkin,eggs and vanilla,beat until smooth.
- Combine dry ingredients in medium bowl.
- Add one cup at a time to creamed mixture,stirring until well blended.
- Stir in nuts and raisins.
- Spoon into greased bundt pan.
- Bake at 350 degrees for 55-65 minutes or until toothpick inserted in center comes out clean.
- Cool in pan 10 minutes,then invert onto serving plate and cool completely.
- For icing: melt butter in heavy medium saucepan over medium-high heat.
- Stir in sugar,evaporated milk,and syrup.
- Bring to boil,stirring constantly,boil 6 minutes.
- Remove from heat and stir in vanilla.
- Pour into medium bowl and cool 10 minutes.
- Beat for 8-10 minutes or until thick and creamy.
- Spread over top of cake.

<p>I enjoy cooking and especially baking.Love homemade bread.I really enjoy trying new recipes.I have a husband and 5 children,so it is a challenge trying to cook to please them all.Some of my kids are very picky eaters.At this time in my life,I am interested in healthy cooking.I lost 70 lbs with Weight Watchers and am trying to keep it off!</p>
