  • 1 lb large carrot, peeled and sliced diagonally into 1/4 inch slices
  • 23 cup water
  • 3 tablespoons butter
  • 3 tablespoons honey
  • 3 tablespoons Bourbon

directions

  • Combine all ingredients in a large heavy skillet over medium high heat.
  • Cook until carrots are tender and liquid has turned into a glaze, about 10 minutes, stirring frequently.
  • Season to taste.

  1. This is now my go-to recipe for carrots. I just pour a bag of peeled mini carrots into the glaze mixture and 15 minutes later they are on the plate and enjoyed by everyone. Easy and delicious!
     
  2. Can't believe I forgot to rate this recipe. These are awesome! I have made these many times now and everybody loves them. I use Jim Beam and let them cook for a long time. The leftovers are even great cold the next day or nuked.

  4. Wow! Easy and delicious! Love the flavor the bourbon lends to the carrots! I bet they would get a beautiful color by par-boiling them; then roasting them with the butter etc. in a 425 degree oven. Yum! I'm going to try that next time. Thanks, we will be making these often.
     
  5. Very delicious and VERY easy which makes this dish perfect for Thanksgiving or Christmas dinner, when you've got 100 other things going in the kitchen. I am not the biggest fan of carrots and I still love this.

Tweaks

  1. I felt the carrots wouldn't cook in the time it takes the syrup to thicken so I boiled the carrots in water for 10 minutes before adding the honey, butter and whiskey and then thickening it. We also felt it was a bit sweet and would reduce the amount of honey next time. Overall it is a great recipe and we'll make it again.
     
  2. I used Knob Creek Smoked Maple bourbon...amazing. Gave the carrots a slight hint of maple flavor.
