  • Heat the oil on medium-high heat.
  • Saute the garlic and onion until they are translucent.
  • Reduce heat to medium and add the beet greens.
  • Stir until all the greens are wilted and heated.
  • Add the white wine and bacon.
  • Cook for another 2-3 minutes.
  • Serve with salt and fresh ground black pepper.

  1. I"m about to start this recipe, and I really need to know if I'm cooking the bacon in the pan I'm using to make the greens.; or I'm I cooking the bacon before I add it to the recipe pan . HELP !!!

I harvested lots of beet greens from our garden and needed to know how long to cook etc and found your recipe:) I didn't have white wine and didn't use bacon but did use onion and added a clove of minced garlic and subbed chicken broth for the wine. My husband and I really enjoyed this!!!
     
  2. Bought a beautiful bunch of beets at local farm store and wanted to do something with all the lovely greens. Just cooked bacon so sauteed in half bacon grease, half olive oil, otherwise true to recipe. Used the leftovers for part of lunch topped with some goat cheese medallions. Thanks for sharing this simple but delicious recipe.
     
  3. So, I was a bit nervous about making this because I have never prepared greens of any type and had never eaten beet greens, but boy, am I glad I decided to make them using your recipe. I had bought beets to make another recipe tomorrow and as I was putting them away in my vegetable crisper I decided to cut off the greens in order to save room and when I saw how many greens there were I didn't want to waste them since they are edible. I had about 2 cups of greens. I had some bacon leftover from breakfast this morning so I chopped 4 pieces up and used them as the bacon bits and followed the recipe exactly the same way after that change. My whole family really enjoyed these and I will never throw of beet greens again. Thank you so much MadCatKim!
     
  4. This is such a great recipe, perfect as is. Would just add that if you are out of white wine and/or stock a good sub is 2 tblspn balsamic vinegar. nummers!

  3. This dish was very tasty. Prepared in my cast iron pan on the grill. Sauteed chopped bacon in olive oil first, added onion until soft and then added garlic. Substituted chicken broth for the white wine just because I didn't have any - and didn't use the entire 1/4 cup, used just enough to have a thin layer of juices in the bottom of the pan. I will not be discarding my beet tops when thinning my garden ever again. Thank-you for sharing this recipe.
